Buddha loves a Raspberry Mojito

It was super-duper-spectacularly hot this weekend. Now, I hate to complain because compared to last summer, this summer hasn’t been too bad. But when I left for my road bike ride at 8:45 a.m. on Sunday, it was already over 85 degrees. Wowsa. So this weekend seemed like the right time to try another cocktail concoction. I had raspberries, limes and mint, so I thought I’d whip up a raspberry mojito! If you’re the type who doesn’t like bits of fruit in your beverage, this one may not be for you, but I love raspberries, and they seemed to meld well with the tangy lime. I also used my lemongrass simple syrup, but you could definitely use the regular stuff, or even agave nectar, or a heaping teaspoon of turbinado (coffee) sugar.

Raspberry Mojito
3-4 ripe raspberries
7 small mint leaves (if they’re not small, hey, adjust accordingly. You’re smart, right?)
1 oz light rum
1/2 oz lemongrass simple syrup
juice from 1/2 lime
Sprite or your favorite lemon-lime soda

Muddle the raspberries and mint leaves in the bottom of a collins glass. Add rum, simple syrup and lime juice. Add ice to the brim of the glass – top with Sprite. Add straw and enjoy!
