A friend of mine recently posted about this on his Facebook blog – he’d bought a fresh pineapple and created a martini with the fruit. I thought I’d give it a try, and while it was definitely drinkable (and one could kid oneself that it’s even healthy – I mean, that IS fresh fruit!) it was a bit sweet for my taste. I’ve probably spent too much time drinking margaritas.
Here’s the general recipe – if you get creative and like the results, let me know!
2 oz gin
5-6 chunks of fresh pineapple
1/2 oz of simple syrup
Muddle the pineapple, top with gin and simple syrup, shake with ice and strain into martini glass. Partake.
